Oatmeal Chocolate Chunk Pecan Cookies For Comfort
Needing some comfort food,
I made these cookies for the first time on Saturday.
I took them to work and my boss/friend
said they were delicious.
So two votes for delicious..
Maybe you should try them?
Recipe at the end.
I made some new candle bowls to see
me through the winter.
I also made this pillow out of
an old linen piece.
Spending hours reading here, snuggled
under a quilt I made years ago.
I usually pieced my backs to save fabric use.
Saddened by Phillip Seymour Hoffman's death.
Such a great loss.
So many great performances.
a family favorite

Comfort Food
Makes 2 1/2 dozen
1c butter softened
1 c firmly packed brown sugar
1/2 c granulated sugar
2 large eggs
2 tsp vanilla
2 c flour
1 tsp baking soda
1/2 tsp salt
3 cups uncooked regular oats
1 pkg chocolate chunk morsels
1 c toasted chopped pecans
Preheat to 350
Beat butter, sugars, add eggs, vanilla
Combine flour, soda, salt
Add oats
Add dry ingredients to butter mixture
Gently stir in chocolate chunks and pecans.
Crop by rounded tablespoons or I use a scoop onto
silpat or parchment lined baking sheet.
Bake for 10-12 minutes or until slightly
browned around edges depending on oven.
I found these baked better with 1 sheet in
middle of oven at 12 minutes.
Yum
Update:
Several gals tried the recipe and loved it
(see comments)
so do give it a go..
I recommend only using chocolate chunks
for that big burst of chocolate
